A special type of senbei distinguished by its delicacy and light, crispy texture. Whereas Nanbu senbei dough can be placed into molds by hand, usuyaki senbei batter must be poured into molds–which is why locals often refer to it as nagashi (poured) senbei. The thinness of the senbei allows the nutty flavors of the walnuts and sesame to shine.
