Iwateya’s Senbei Soup


Senbei soup is a homestyle dish that has been beloved in the Nanbu region for centuries. It is made with a special kind of Nanbu senbei called kayaki, which is broken up and simmered in the soup. Because the kayaki dough is strengthened in the kneading process it absorbs the hot broth instead of dissolving, resulting in a chewy and flavorful senbei.
